Dal Ingredients    

  •     1 cup red lentils    
  •     1 tsp salt     
  •     1 tsp Madras Curry Powder    
  •     1  onion, diced    
  •     A piece of grated ginger
  •     2 Thai green chilis or ½ jalapeño, diced
  •     3 tomatoes, peeled and diced    

Tadka Ingredients         

  •     1 tbsp ghee, coconut, or olive oil     
  •     1 ½ tsp  cumin seeds     
  •     3 small bay leaves     
  •     4 cloves garlic, diced 
  •     ¼ tsp Garam Masala      
  •     1 bunch cilantro     

Technique Used to Make Masala Dal

  • Rinse lentils and place it in a sturdy saucepan with 3 cups of water. Lentils should be cooked over a high temperature with the lid off at first and without stirring. Remove the foam from the water’s surface by skimming it off.
  • Incorporate your curry powder, salt, onion, tomato, ginger, tomatoes, and  jalapenos or green chillies. 
  • When the water reaches a boil, decrease the heat to a moderate temperature, partly cover the pot, and let the lentils simmer for 30 minutes. Watch carefully, since the lentils have a propensity to spill over. Add ½ to 1 cup extra if moisture absorption from your lentils occurs too rapidly. It ought to resemble thick pea soup in texture. Add the Garam Masala spice blend towards the end.
  • Place the ghee or oil in a small pan and heat it over moderate heat. Toss in some cumin seeds and some bay leaves after the ghee or oil is hot and shimmering (this is crucial). Almost immediately, you should smell the seasonings. Let it fry until you notice the spices growing darker. 
  • Cook the garlic until it becomes golden brown, then add it to the pan.
