Apple Pistachio Barfi
Ingredients:
2 Honey crisp apples, shredded
1 cup date sugar
2 cardamom pods
1 cup desiccated coconut
1/2 cup ghee (clarified butter)
1/2 cup milk
6-7 saffron strands
1/2 cup crushed pistachios
Instructions:
Soak the saffron strands in the milk overnight and set aside.
In a pan, heat the ghee and add the shredded apples. Cook until the apples are completely dry and all moisture has evaporated.
Add the date sugar, desiccated coconut, cardamom pods, and saffron-infused milk to the pan. Stir continuously until the mixture is well combined.
Continue cooking over low heat, stirring frequently, until the mixture thickens and forms a dough-like texture, about 10 minutes.
Transfer the mixture to a baking sheet and flatten it out. Refrigerate for 3-4 hours, or until set.
Cut into bar shapes and garnish with crushed pistachios and additional saffron strands. Serve and enjoy!
