Chicken Meatballs in Smoky Strawberry Chipotle Sauce is a delightful fusion of flavors that brings together the bold smokiness of chipotle, the sweet-tart complexity of strawberries and the tender juiciness of perfectly cooked chicken meatballs. Ingredients for Chicken Meatballs

  • 250 gm chicken mince 
  • 1/2 cup breadcrumbs
  • 1/4 cup grated processed cheese
  • 1/4 cup grated parmesan cheese
  • 1 tbsp smoked paprika powder
  • 1/2 tbsp dry oregano
  • 1/2 tbsp parsley
  • Salt and pepper to taste

Ingredients for Smoky Strawberry Chipotle Sauce

  • 1 cup fresh strawberry
  • 1/4 cup tomato ketchup
  • 1 tbsp strawberry crush
  • 1 tbsp balsamic vinegar
  • 1/2 tbsp soy sauce
  • 3 pieces of soaked and dried chipotle chilli
  • 1tbsp garlic paste
  • 1tbsp ginger paste
  • 1tbs Dijon mustard

Method:

Step 1 – Preparing the Smoky Strawberry Chipotle Sauce: Preheat the oven to 280°F and roast strawberry slices until caramelized. In a saucepan, combine roasted strawberries with other ingredients mentioned and simmer for few minutes. Cool and then blend into a smooth mixture.

Step 2 – Preparing the meatball: Combine the meatball ingredients, shape into balls and lightly brown them in a skillet.

Step 3 – Simmer the smoky strawberry sauce with meatballs.  Garnish with chopped parsley.
