A delicious dish of potatoes and cheese

September is National Potato Month, and SEEMA brings you a simple, yet delicious recipe for creamy baked mashed potatoes. Dripping with richness, this bake works well for a weekday dinner or a weekend party.
This inviting easy creamy cheesy potato bake will please guests as well as family.
INGREDIENTS
Ingredients for creamy potato bake
2.5lb potatoes
2/3 cup milk
3/4 cup thickened heavy cream
1/3 cup mayonnaise, preferably whole egg (or 1/4 cup cream)
1 1/2 tsp fresh thyme leaves and some for garnish
2 large minced garlic cloves
3/4 tsp salt
Black pepper
2 cups shredded cheese
1 cup shredded mozzarella cheese
Use any type of potato except those that are waxy. Instead of mozzarella, you can choose a cheese that melts easily, but avoid except feta or goat’s cheese.
Directions for Cooking
Preheat oven to 350 degrees F or 180 degrees C.
Peel the potatoes, then cut them into cubes. Place the potatoes in a large bowl. Add the remaining ingredients, except for the mozzarella and then mix everything well.
Pour into a 3 litre / quart baking dish. A dish that is 9 inches square will do.
Cover with aluminum foil. Bake for 60 minutes. The potatoes should be tender after an hour, but bake the dish longer if necessary.
Remove the foil and sprinkle the mozzarella cheese. Bake for 25 minutes more. The cheese will appear golden in color.
Let the dish rest for 5 to 10 minutes before serving. Garnish with additional thyme leaves.
Notes and Tips
You can spice up the dish a bit with Indian flavors.
You can also add vegetables, such as onions or mushrooms.
You can make this dish on a stovetop, but you will need to slice the potatoes thin. It will resemble scalloped potatoes.
