For the Kofta:    

  • 750 gram Lauki         
  • 2 tsp Salt         
  • 4 tbsp Besan         
  • 1 tsp Red Chilli Powder         
  •  ½ tsp Garam Masala Powder         
  • Frying oil 

For the Sauce:    

  • 4 tbsp Mustard Oil         
  • 1 tsp Cumin Seeds         
  •  2 tsp Ginger 
  • 2 tsp Garlic     
  •  2 tsp Green Chillies (diced)    
  • 1 Chopped Onion      
  • 1 cup Tomatoes (finely     chopped)         
  • 2 tsp Coriander Powder         
  • 1 tsp Turmeric Powder         
  •  2 tsp Kashmiri Red Chilli Powder         
  • ½ tsp Garam Masala Powder         
  •  2 tbsp Fresh Coriander 

Method Used to Make Lauki Kofta Recipe

  • Get the lauki ready for the Kofta. 
  • Peel the lauki with a vegetable peeler and then wash it well.
  • Using a knife, slash the lauki in half lengthwise. Once you’ve gotten rid of the big seeds, grind it using the moderate opening of a box grater. 
  • Sift 750 grams of grated lauki.
  • It’s important to test the lauki for bitterness before including it into the sabzi recipe.
  • Put 2 teaspoons of salt into a medium-sized mixing bowl with the shredded lauki.

  • In a frying pan, warm 4 tablespoons of mustard oil.
  • To season the oil, sprinkle in 1 tbsp of cumin seeds and wait for them to sizzle for three to four seconds.
  • Mix in 2 teaspoons of finely diced ginger, 2 teaspoons of finely chopped garlic, and 2 teaspoons of finely chopped green chile and sauté for 1 minute on moderate heat.
  • Fry 1 cup of chopped onion until it is golden brown. 
  • Now, stir in 1 cup of diced tomato and cook for another two min.
  • After two min, stir in 1 teaspoon of turmeric powder, 2 teaspoons of Kashmiri red chili powder, and 1/2 teaspoon of garam masala.
  • Extract some lauki and add the liquid to the pan, then let it simmer for two or three minutes.
  • Heat the curry to a boil after adding the two cups of water. Put in the kofta and let it simmer for a moment.
  • Present these morsels heated, with a touch of coriander.
