What You’ll Need
For white dhokla
- ½ cup sooji/semolina
- ¼ cup curd (you may use yoghurt if you prefer)
- ½ cup water
- Salt to taste
- ½ teaspoon Eno
For yellow dhokla
- 1 cup chickpea flour
- 1 tbsp semolina suji
- ½ cup water
- 2 tbsp curd
- turmeric powder (just a pinch)
- 2 tsp lemon juice
- Salt to taste
- 1.5 tsp Eno
For tempering:
- 2.5 tbsp cooking oil
- 1 tsp mustard seeds
- 2 julienne-style sliced jalapeños
- A few curry leaves
- 2 tbsp dates chutney /ketchup/mint chutney
Technique Used to Make Sandwich Dhokla
White dhokla’s ingredients
- For 6 min on low heat, toast the rava/semolina in a saucepan sans oil.
- While dhokla is resting, add the rest of the components except for the Eno.
- After introducing 2 cups of water, turn on the cooker and let it heat up. Make sure the canister is well lubricated with oil.
- To the mixture, add the fruit salt or Eno.
- Steam the rava dhokla for 11 minutes until it’s done.
- To make the rava dhokla stick together, spread the mint chutney on the rava dhokla uniformly until a sparse layer is created.
Method for making the yellow dhokla
- Eno is an optional component, which should be mixed in last.
- Make sure the batter is uniform before adding the other ingredients.
- Distribute the khaman batter over the rava dhokla/chutney and then add the Eno sauce.
- For 16 minutes, let the steam build up.
- Set that aside for a few minutes to cool.
- Tilt the pan upside down and slide a knife over the pan’s edges to release the stacked dhokla.
- Cut into the required form.
Tempering Instructions
- Add mustard seeds to the hot oil and let them to sputter. Cook for one more minute after adding the last constituents.
- Bring 1/2 cup of water to a boil before using.
- Serve the dhokla pieces with a sprinkling of salt and pepper.
- Tempering should be added at the time of serving if the dish is to be served later.
