Stuffed Potatoes Recipe

Ingredients

5 russet potatoes (preferably large sized)

2 tbsp of unsalted butter

½ cup sour cream at room temperature

2 cups of shredded cheddar cheese

4 slices of cooked bacon, chopped into ½ inch pieces

2 scallions, preferably thinly sliced

Salt and black pepper

Method

Clean the potatoes and then prick them several times with a fork.

Rub the potatoes with unsalted softened butter.

Place a large rack in the oven on a baking sheet and place the potatoes on it and then get them baked in the oven for 30-40 minutes. Ensure that the potatoes are soft by pressing with your fingers. If they are not, bake them for some more time.

After their baking is over, let the potatoes cool for 15 minutes or so.

In the meanwhile, cook the chopped bacon in a skillet until the pieces are brown, tender and crisp. Also cook the scallions.

When the potatoes cool down, cut them into half and then scoop out most of the inside flesh from the potatoes. Leave little bit of flesh around the top edges and a little bit on the bottom and sides so as to prevent the potato skin from tearing.

Now place the near empty potato shells back on the baking sheet and bake them at 400 degrees F for 5-10 minutes so that the potato skins become firm and crispy.

Then place the cooked potato flesh in a bowl. Use a potato masher to smash potato flesh together with sour cream until they are mixed together.

Now bring in cheddar cheese, bacon and scallions and season with salt and pepper, according to your taste, in the same bowl. Stir until the mixture becomes soft and fluffy.

Now spoon the mixture in the potato shells. Bake the mixture in the oven for 15-20 minutes or until the stuffed potatoes turn golden brown on the edges.

Now your stuffed potatoes are ready to enjoy. Of course, the portion size mentioned are not stringent and would vary depending on the guests in your table.
