• One big chopped onion

• 3 tbsp of olive oil

• One cinnamon stick

• Three to four crushed garlic

• 1 tbsp ginger paste

• One green chili

• 1 ½ tsp mandi mixed spice

• 3 cups basmati rice

• One chopped tomato

• ¼ tsp saffron

• Two bay leaves

• 4½ cups chicken broth

• Sliced almonds and raisins

Directions

1. Soak the rice for about 20 minutes, then rinse it thoroughly.

2. Heat olive oil under medium heat in a saucepan.

3. Add chopped onions to the hot oil and sauté it for about two to three minutes till it turns translucent.

4. Add the crushed garlic and ginger paste, then sauté them for 30 seconds, till the raw smell disappears.

5. Add the mandi spice, cinnamon stick, and bay leave and stir for two minutes.

6. Put the tomato and diced chili into a blender, grind them and add the puree into the pan.

7. Add the rice into the pan and continuously stir to combine it with the spices for about ten minutes.

8. Pour the chicken broth and salt, cover the rice, and turn the heat to medium-low for about 15 minutes.

9. After the time elapses, turn off the heat, put the rice aside, and fluff it with a fork.

The Charcoal Procedure

The last step involves smoking rice and chicken in charcoal to get the smoky flavor.

Directions

1. Place a charcoal briquette on your gas stove for about five minutes until it turns red hot.

2. Cover aluminum foil lightly with oil, use it to make a double-layered pouch, and place the hot charcoal inside. Place the hot charcoal at the center of the rice bowl.

3. Place the cooked chicken over the rice with charcoal, cover it with another layer of aluminum foil then the bowl’s lid.

4. Leave it for about ten minutes or till serving time to get the perfect smoky flavored rice.
