Ingredients
For the Sabayon
- Dark Chocolate Compound 100 grams
- Cooking Cream (25% Fat) 70 grams
- Egg 60 grams
- Castor Sugar 17 grams
- Whipping Cream (35% Fat) 30 grams
- Orange Liqueur 5 ml
For the sauce and garnish
- Cooking Cream (25% Fat) 50 grams
- Dark Chocolate Compound 50 grams
- Orange Liqueur 10 ml
- White Chocolate Compound 25 grams
- Candied Marmalade Peel one
For the base – Brandy Snaps
- Flour 50 grams
- Butter 50 grams
- Demerara Sugar 50 grams
- Corn Syrup 50 grams
Method
- To make the Sabayon, start by double boiling the egg and castor sugar to create a rich sabayon. Melt the dark chocolate compound and blend it with hot cooking cream. Add the orange liqueur, then gently fold in separately whipped cream. Set the mixture in a chiller overnight to develop its full flavor.
- For the Brandy Snaps, melt the butter, demerara sugar, and corn syrup together. Incorporate the flour, along with a pinch of salt and lemon rind. Chill the dough until set, then bake at 180°C for 12 minutes until golden and crisp.
- To make the sauce, finely chop the dark chocolate compound. Warm the cream and combine it with the chocolate. Add the orange liqueur for a vibrant flavor.
- To assemble, use the crisp brandy snaps as the base for your decadent creation. Before serving, drizzle with a touch of white chocolate and garnish with candied marmalade peel for a finish.
