How to Bake Traditional Christmas Cake

Christmas is synonymous with Christmas cake. While the traditional fruit cake covered with white icing sugar and garnished with mistletoe comes to mind when thinking of Christmas cake, there are also other types of Christmas cake enjoyed throughout the world. Let’s take a look at some of the most popular festive cake types. 

The Traditional Fruit Cake

Many bakers insist that this type of cake should be prepared at least two months in advance, although it’s not always necessary. Reason being is that you can add brandy to it regularly to assist with the cake’s maturation. The brandy also keeps the cake moist and allows you to store it for longer. However, if you don’t make your Christmas cake this long in advance, chances are it will be just as scrumptious! 

If you use this recipe, be prepared to spend about 45 minutes preparing your Christmas cake. It should bake for about 4.5 hours, while taking approximately 1 hour to cool down. 

Simple Christmas Cake Ingredients 

You’ll need to following before commencing.

  • 525 grams of blackcurrants 
  • 225 grams of sultanas 
  • 225 grams of raisins 
  • 300 grams of flour 
  • Glazed cherries 
  • Candied peel
  • Fine cinnamon, preferably a teaspoon 
  • Salt 
  • A teaspoon of nutmeg 
  • Melded spice, preferably ½ teaspoon 
  • 300 grams of brown sugar 
  • 300 grams of butter 
  • A half dozen of eggs 
  • Lemon zest 
  • A few tablespoons of brandy 

Method Used to Easy Make Christmas Cake 

  1. Do preheat your oven to at least 300 degrees Fahrenheit.
  2. Line your cake pan with grease proof paper, as you don’t want your Christmas cake to stick to the pan.
  3. Gather your dish used for mixing and add the candied peel, glaze cherries, spices, all the dried fruit, plus your salt and flour. 
  4. In a separate dish, mix your butter with the sugar, before adding the zest of your lemon. Beat your eggs, before adding it to the butter. 
  5. Add a tablespoon of flour to the butter and sugar mixture too.
  6. Take half of your flour and all the dried fruit and mix it together.
  7. Incorporate your brandy into the flour and dried fruit concoction.
  8. Once the mixture is stirred, dish it into your greased cake tin.
  9. Always ensure that there are no holes in the mixture and smooth the mixture over.
  10. Be sure to leave a bit of a slump in the center of the baking pan. No worries about this though, as the mixture is bound to rise in the center again while it’s baking. 
  11. Don’t forget to clean any spilled batter, as this this may burn while baking. 
  12. Bake your Christmas cake for approximately 4.5 hours.
  13. Once done, please note that the cake should be golden brown.
  14. You can check if the cake is properly baked by placing a knife in the center of the cake. If the knife has not wet batter on it, it’s considered baked. 
  15.  Get out your cooling rack, and allow your Christmas cake to cool down on there for roughly 60 minutes. 
  16. Once your Christmas cake is completely cool, remove it from the baking pan.
  17. Make some holes in the cake with a skewer to add your brandy.
  18. If you prefer, you could add some white icing and decorations to the Christmas cake, or you may leave it as is and eat it plain.
  19. If you have time left until Christmas, add a few more tablespoons of brandy to the Christmas cake every few weeks. 
  20. When storing your Christmas cake, don’t forget to use parchment paper. Also always ensure that your storage tin is airtight.

Christmas Cake: Yule Log

The yule log is another decadent traditional Christmas cake. It can be served as a cake or a dessert too. It’s also often referred to as a chocolate roulade. You’ll need the following ingredients to make this scrumptious chocolate and cream filled treat.

Your Cake Ingredients

  • ½ teaspoon of baking powder 
  • 4 eggs 
  • 85 grams of flour 
  • 85 grams of caster sugar 
  • 2 tablespoons of cocoa powder 

Ingredients for the Cake’s Center and Icing 

  • 1 tablespoon of golden syrup 
  • A tub of double cream 
  • At least 50 gram of softened butter 
  • 150 gram of dark chocolate 
  • Sifted frosting powder 
  • For a garnish, you could use some sprigs of holly and dust the log with frosting powder.

How to Prepare This Easy Christmas Cake Recipe

  1. Preheat your oven to 392 degrees Fahrenheit.
  2. Grease a Swiss roll baking tin. 
  3. Beat your eggs and caster sugar.
  4. In a separate bowl, mix your dry ingredients together, before adding it to your caster sugar and egg mixture. 
  5. Place this mixture into your baking tin and bake for about 10 minutes.
  6. When the cake is finished baking, remove it from the tin, and place it on greaseproof paper to cool.
  7. For your filling or icing, melt your chocolate and butter. 
  8. Add your syrup and about 6 tablespoons of double cream. Add your frosting powder as well and mix.
  9. Beat all the double cream, and place if over the top of the cake and in the center. Be sure to roll the cake into form of a log again, once you’ve placed its delicious filling.
  10. For a lovely decorative touch, add a sprinkling of frosting powder to the cake with a few holly sprigs for good measure.
