
Its that time of the year when Eid is around the corner and post a period of fasting it is time for a feast and what better way that the quintessential Hyderabadi Mutton Biryani.
Biryani is a dish that symbolizes festivity and this Eid this recipe of a mutton biryani is by Maseera Fatima, food blogger from Hyderabad. This recipe is from her recently released cook book Maseera’s Cook Book: Ramadan to Eid Ultimate cooking guide that has been launched internationally.

Ingredients
For Mutton Marinade
- Mutton (with bone) 1 kg
- Thick curd (yogurt) 1 cup
- Ginger-garlic paste 3 tbsp
- Fried onions (birista) 1½ cups (6-7 medium-sized onions)
- Green chilies (slit) 6–8
- Fresh mint leaves 1½ cups (packed)
- Fresh coriander leaves 1 cup (packed)
- Red chili powder 2½ tsp
- Turmeric powder ½ tsp
- Garam masala powder 1½ tsp
- Coriander powder 2 tsp
- Lemon juice 3 tbsp
- Raw papaya paste 2 tbsp (essential for tenderness)
- Salt 1-1 ½ tsp
- Oil ½ cup
- Ghee ¼ cup
For Rice
- Basmati rice (aged) 750 grams (about 4 cups)
- Water for boiling (2-3 liters)
- Bay leaves 2
- Green cardamom6
- Cloves 6
- Cinnamon 2 sticks
- Shah jeera 1 tsp
- Salt 3-4 tsp
For Dum & Garnish
- Saffron 15–20 strands soaked in ¼ cup warm milk
- Ghee 3 tbsp
- Rose water 1 tbsp
- Barista, lemon juice, coriander, and mint leaves.
- Wheat dough for sealing (optional)
Method
- Wash and drain mutton completely. Mix all marinade ingredients and massage well into the meat. Cover and refrigerate for a minimum of 8 hours (ideally 12–24 hours). Wash basmati rice and soak for 30 minutes.
- Boil 500 ml-600 ml of water with whole spices and salt. Add soaked rice and cook till 70% done; drain immediately. In a heavy-bottomed handi, spread marinated raw mutton evenly. Gently layer parboiled rice over it. Sprinkle fried onions, mint, coriander, saffron milk, ghee, and rose and kewra water. Seal the lid with dough and cook on high heat for 10 minutes, then on low heat for 45–50 minutes.
- Switch off the flame and rest 10 minutes. Gently mix from the sides. Serve hot with mirchi ka salan or bagare baingan.
Tips
- Kachchi Technique – Never pre-cook mutton. Marination is key: Always marinate mutton for 12–24 hours for deep flavor and tenderness.
- Use bone-in meat only—flavor lives in bones. Use the right cut: shoulder/ribs (with some fat) give the best result.
- Rice texture: Use aged basmati; cook only 70% so it finishes on dum.
- Salt balance: Rice water should taste slightly salty—this seasons the biryani evenly.
- Perfect dum: First high heat to create steam, then slow flame for even cooking.
- Seal well: A tight seal traps aroma and moisture—don’t skip it.
- Resting after dum is crucial as this helps the flavors settle.
- Never stir during cooking.
