How to Make Kesar Peda
What You’ll Need
- 1/4 tsp grated nutmeg
- 1 1/4 tsp cardamom, crushed
- 25 saffron strands
- Yellow gel food colouring
- A pinch of salt
- 250 g crumbled paneer
- 100 g full-fat milk powder
- 1 tbsp ghee
- 100 g icing sugar
- 1 tbsp whole milk
To garnish:
- 2 tbsp pistachios, sliced
- 30 saffron strands
Method Used to Make Deliciously Creamy Kesar Peda
- The Kesar Penda Mix is made by combining around 25 strands of saffron with 1 tablespoon of heated milk in a small basin. Reserve for later use.
- Spread the paneer crumbles out on a wide serving platter.
- Use the bottom of your hand to knead the paneer and work the granules out of it.
- About 40 repetitions should provide a material that can be rolled into a ball.
- Use a wide, sauté skillet to heat the ghee. Mix in the paneer and crush it up with a spoon or spatula.
- To prepare, cook the ingredients together over low heat while stirring constantly.
- When the paneer is loose and mushy, add the milk powder and stir to combine.
- Stir in the saffron milk, crushed cardamom, finely grated nutmeg, and a smidgen of salt.
- Blend well, then turn off the heat.
- To settle, distribute the blend out on a big dish and leave it undisturbed at room temperature.
- Blend in the yellow food colouring by kneading the dough well.
- The sugar should be added next. Mix the sugar in with a spatula or your clean hands.
- Slackening and a strong stickiness will set in. Don’t stress though; this happens sometimes.
- Refrigerate the wrapped mixture for at least 8 hours and up to a day.
- After some time, it will harden into a solid cube.
Method to Mould Your Kesar Peda
- Put the batter concoction in the fridge for a while, and then divide it up into little pieces.
- Knead it one more time, smoothing down any bumps with the palm of your hand. It has to be silky, with little granules.
- Roll the ingredients into 20g balls.
- Sprinkle a few pistachio slivers and a sprig of saffron over the top of the Penda.
- Softly pound on the Penda using a Penda press, stamp, or your palms.
- Kesar Penda may be dried for eight hours in a cool, dry location after they have been shaped.
- This third round of air drying will aid in the formation of a hard, crispy crust on the exterior of the Penda.
