How to Make Piquant Kanji Vada

- 1 tbsp yellow mustard
- 1 tsp salt
- 1 tsp black salt
- 1 tbsp mustard oil
- 2 Litres of water
- A sprinkling of hing or asafoetida
- 1 tsp turmeric powder
- 1/4 tsp red chilli powder
For Vada:
- 100 grams of moong dal
- Salt
- Oil
Method Used for Making Kanji Vada
- Get a pot and put some water in it, then set it over low heat.
- Transfer to a plastic or glass container to chill.
- After that, stir in your hing, turmeric powder, red chili powder, yellow mustard, salt, and black salt until it’s completely combined.
- Put the lid on the container and set it away for three days. Daily, using a dry spoon, stir the kanji.
- After the 4th day, when all the seasonings have infused the water, the kanji is at its peak flavour.
- Deliciously sour and zesty kanji is now completed!
- Vadas need properly washing and soaking moong dal in water for two hours.
- The surplus water may be drained out later.
- Coarsely grind the wet moong dal in a jar.
- To prepare the dal, transfer it to a dish and season it with salt. Stir it vigorously.
- To deep-fry the vadas, heat sufficient oil in a skillet.
- Make a tiny ball with your fingers and drop it into the oil.
- Put as many vadas as you can fit into the oil at once.
- The vadas should now be deep fried until they are puffy and golden brown all around.
- The fried vadas may be drained on paper towels to remove the excess oil.
- The fried vadas should be soaked in tepid water for 16 min before being squeezed to remove excess moisture.
- Spread four or five vadas on a bowl of kanji. Bring comfort and refreshment to your guests with this beverage.
