What You’ll Need    

  •     1 cup  Rice flour     
  •     1/2 cup Sooji     
  •     1/4 cup Maida     
  •     2 Onions , diced     
  •     3 fresh jalapeños , chopped         
  •     4 sprigs of curry leaves         
  •     1/4  tsp hing         
  •     1/2     tsp  Red Chilli powder     
  •     3     tbsp of cooking  oil     
  •     Salt to taste     
  •     Oil for deep frying    

Technique on How to Make Maddur Vada

  • Prepare the ingredients for the Maddur vada Recipe and have them on hand before you begin.
  • Mix all of the contents for the Maddur vada dough in a big mixing bowl sans any water. 
  • The dough will be more like toast crumbs than a soft ball of dough.
  • Cover the dough and let it rest for 12 minutes  once it has been mixed.
  • As the shallots are subjected to salt, they will lose a little amount of water.
  •  This resting period will help draw out the hydration.
  • After ten minutes of kneading, the mixture should resemble a hard roti batter.

  • Deep fry the Maddur vada in hot oil.

  • Withdraw the Maddur vada from the oil when it is golden brown and crispy, and drain it on household paper towels before serving.
  • Serve the Maddur vada with tasty Coconut chutney and a cup of hot brewed coffee as a snack.
