Crispy rose cookies are a popular traditional cookie made mainly at Christmas time by Indian Christians. Rose cookies are also called acchu murukku or achappam. It’s also meticulously designed like a flower, complete with delicious fried petals. Rose cookies can be eggless or made with eggs. It can also be made in advance to serve guests during the holidays. How to Make Eggless Rose Cookies
You’ll need the following ingredients to make a scrumptious batch of rose cookies.
- 1 tablespoon of powdered or icing sugar
- Powdered cinnamon
- ½ teaspoon of baking soda
- 3 tablespoons of frosting sugar
- Cooking oil
- 1 cup of maida
- 2 tablespoons of cornflower
You don’t need to use baking soda, and can use a teaspoon of potassium bicarbonate instead. You can also substitute your sunflower oil with some applesauce.
- Get a large bowl and place your sugar with your maida, cinnamon powder, and cornflour in there. Mix the ingredients well. Add a cup of water to the mixture and keep mixing it until the consistency is smooth like a batter.
- Heat your sunflower oil or applesauce. If you have a flower mold, dip it into the heated oil. Remove the mold from the hot oil or applesauce.
- Place half of your mold into your batter, before placing the mold once more into the heated oil. Be sure to deep fry the rose cookies until they are golden brown all over.
- The rose cookies may be a bit on the oil side, but no worries, as you can just drain the cookies on a sheet of absorbent paper.
- If you want to make another batch, just repeat the same procedure, until you have the desired amount. Once your cookies have cooled down a bit, add the finishing touches like a sprinkling or dusting of powdered sugar.
How to Make Acchu Murukku with Eggs
You can make acchu murukku with eggs with the following ingredients.
- Frying oil
- ½ cup of sugar
- 1 cup of rice powder
- ¼ cup of maida
- An egg
- Coconut milk
- A sprinkling of salt to taste
- Sesame seeds
For making acchu murukku, follow these steps.
- For a lovely thick batter, mix all of your ingredients in a blender.
- Place the batter into a stainless steel bowl and add a teaspoon of sesame seeds. If you’re not sure on how thick your batter should be, use the thickness of dosa batter as a guide.
- Heat your frying oil in a saucepan and place your rose cookie mold in the oil. Wait for the mold to become hot, before you dip it into your rose cookie batter. Make sure that at least ¾ of the mold is immersed in the batter.
- Remove the mold from the stainless steel dish with the batter, and place the mold into the hot oil in your saucepan or frying pan.
- Remember that in order to get the batter off the mold into the oil, you need to gently shake the handle of the mold.
- If the batter doesn’t come off the mold too easily, simply use a fork to pry the batter from the mold.
- You should fry the rose cookies until golden brown.
- Note that this is also not the only way to fry rose cookies, and that you can do so with raw rice instead of rice powder too.
It takes approximately 10 minutes to prepare, and 40 minutes to cook these.
