Badam halwa recipe is a classic Indian dish that resembles pudding, and is made by cooking raw almonds in ghee, milk, or water and sugar. Cardamoms and saffron are used to flavour it. ‘Badam’ is the Hindi term for ‘almonds,’ which is how the name was derived. The following is a bit on the origin of halwa, and an easy to make badam ka halwa recipe.

The Evolution of Halwa

It is estimated that the term halwa infiltrated the English vernacular in the 1800s from the Arabic word ‘Hulw,’ which means sweet. According to Abdul Halim Sharar’s 20th-century book “Guzishta Lucknow,” the Arabic dessert was brought to India by way of Persia. Date purée and milk were the base for the first iteration of this classic Middle Eastern sweet.

According to Colleen Taylor Sen‘s book “Feasts and Fasts,” the Halwa was introduced to India somewhere between the early 13th and mid-16th century, during the time of the Delhi Sultanate. According to other mythologies, the Ottoman Empire was the birthplace of the Halwa cooking technique. The 10th and oldest continuously ruling Sultan of the Empire, Suleiman, established a special kitchen dedicated to delicacies like Halwa.

Food historians have determined that Muhammed ibn al-asan Ibn al-‘Kitab Karm’s al-Tabikh’ (The Book of Dishes) from the 13th century has the first documented recipe for Halwa. There are recipes for eight distinct kinds of Halwa described. Additionally, Karachi and Kozhikode, two coastal towns in India, were two of the first Indian cities to have Arab influence, and hence Halwa remains an intrinsic component of gastronomic traditions in these places.

Many different kinds of Halwa are now widely accessible in stores and restaurants around the nation. A few of the halwa varieties available in India include the “Hari Mirch ka Halwa” from Pune, the “Cholar Dal Halwa” from West Bengal, the “Anda Halwa” from Uttar Pradesh and Bihar, the “Kashi Halwa” from Karnataka, and the “Karutha Haluwa” from Kerala. “Gajar ka Halwa” is one popular variation. Carrots originated in Afghanistan and were introduced to India by the Dutch. The experimentation that led to Gajar ka Halwa started with the cultivation of these carrots in Punjab.

Halwa may have its roots in Arabia, yet it is as quintessentially Indian as anything can be. As a result of its pervasiveness in the region, sweets merchants in the subcontinent are still often referred to as “Halwais” today. Halwa is the delectable delicacy at the center of Indian culture; it brings families together and symbolizes the unity of India as a whole.

In India, halwa has become a favorite among dessert eaters. The sweet dish Halwa, which has several variations, is at the center of Indian culture.
