Rice Krispy Treats: Naiya’s Take

riceI love to cook. I am a sucker for quick and easy recipes, especially ones that kids can make with you. I love kitchen gadgets and sharp knives. I am currently obsessed with making sourdough bread at home. The inspiration for my rice krispy treats came during my daughter’s birthday. She loves it when her mamma bakes for her but is not too fond of cakes. A stack of these rice crispy treats was a perfect alternative to a traditional birthday cake. She loves these so much that we made a big stack to share with her class.

The Recipe


  • Unsalted butter – 6 tbsp
  • Marshmallows – 16 oz pack
  • Crispy rice cereal – 6 cups

  1. Melt the butter in a heavy bottom saucepan on medium heat.
  2. Add the 16 oz bag of marshmallows. Mini ones are easier to melt. If using regular size, break them into smaller pieces with your hands.
  3. Melt the marshmallows with a silicon or wooden spatula. Don’t mix too much if using rainbow marshmallows to avoid brown color.
  4. When marshmallows are melted, pour 6 cups of rice cereal.
  5. Mix quickly and transfer to a buttered square shape box. Cover with parchment paper and press with hands to get even thickness.
  6. Cut into squares with a buttered knife after 5 mins.
  7. Keep them in an air tight container and they will stay chewy.

Note: You can also easily cover the rice krispy treats in melted chocolate or candy melts for special occasions.
