Saffron-infused Shrimp Skewers

These saffron-infused shrimp skewers with fenugreek pesto are a sophisticated, yet easy snack to savor with your family or to serve as an appetizer at a party.

Recipe of Saffron-infused Shrimp Skewers with Fenugreek Pesto

Shrimp 9 ounces

Saffron threads 1 pinch

Olive oil 2 tbsp

Garlic (minced) 2 cloves

Fenugreek leaves (fresh, chopped) 2 tbsp

Pine nuts 1 tbsp

Parmesan cheese (grated) 2 tbsp

Salt and pepper to taste


Soak saffron in warm water. Marinate shrimp with saffron, olive oil, minced garlic, salt, and pepper.

Thread shrimp on to skewers and grill until cooked.

For pesto, blend fenugreek leaves, pine nuts, Parmesan, salt, and olive oil until smooth. Serve shrimp skewers with a dollop of fenugreek pesto.
