A Sri Lankan dish to properly celebrate that country’s independence day

After a rather difficult 2022, things are looking up for the island country of Sri Lanka. Perhaps this independence day is more important for the country than ever before. A national holiday, this day sees flag-hoistings and a televised speech by the president. A parade usually celebrates the might of the armed forces. Apart from celebrating the country’s culture, a 21-gun salute occurs at Colombo’s lighthouse.
Food completes the celebrations. A typical Sri Lankan meal consists of rice, meat, pickle, and a vegetable curry. Being on the coast, fish is an important part of the cuisine. Hence, fish curry is a staple. So we present a recipe of fish that will add zing to your festivities.

INGREDIENTS
- 1 lb sear fish
- 1 tbsp chopped garlic
- 2 ½ tbsp chopped onions
- 1 oz chopped tomatoes
- 1 ¼ tsp green chilli
- Curry leaves
- ¾ tsp turmeric powder
- 1 ¼ tsp chilli powder
- 1 ¼ tsp black pepper
- 1 cinnamon stick
- 1 ¼ tsp gamboge
- Coconut milk one cup
- 1 ¼ tsp mustard
- Oil as required
- Salt to taste
METHOD
- Heat three tablespoons of oil in a pot. For better taste, use a clay pot.
- Add chopped garlic and onions, curry leaves, let them fry for a minute or two and add the chopped tomatoes.
- Add the curry powder, turmeric powder, green chilli, black pepper, coconut milk, gamboge, and mustard. Cook for a few minutes. Add the sear fish and add salt as per your taste.
- Cover the pot and slow cook for another 10 to 15 minutes.
- Pair this sear fish mustard curry with a bowl of rice and a side of vegetables for a delicious Sri Lankan meal.
