SEEMA Cooks: Potato Fritter Sliders for the Late Summer Era

Perhaps you’ve already made veggie burgers a couple of times this summer (like the delicious recipe we ran for Curried Quinoa Burgers by our founder, Seema Kumar, a couple of weeks ago). To mix things up, we love this recipe for Potato Fritter Sliders, which comes to us courtesy of Meeta Arora of the popular food blog Piping Pot Curry. Not only are they vegetarian, but because you make them in the air fryer, you won’t heat up your kitchen or have to sweat it out over the grill during this late-summer heat.

Potato-Fritte

For Potato Stuffing

3 potatoes, boiled and peeled
1 tbsp oil
8 curry leaves
1/2 tsp mustard seeds Mustard Seeds (Rai)
1/8 tsp asafoetida (optional)
1 green chili pepper, minced (optional)
4 cloves garlic, minced
1 inch fresh ginger, minced
1/2 tsp ground turmeric
1/2 tsp salt
2 tbsp fresh cilantro, finely chopped
1-2 tbsp lemon juice

For Batter

3/4 cup chickpea flour
1/2 tsp cayenne or red chili powder
1/2 tsp salt
1/3 cup water
1/2 tbsp oil

Other Ingredients

8 dinner rolls
2 tbsp ghee or butter
2 tbsp chili garlic chutney
Mint Cilantro Chutney
Tamarind Chutney
