SEEMA Cooks: Roasted Pineapple

Pineapple roasted in the oven makes for a simple and delicious treat! You may perfect it by pairing it with a decadent vanilla ice cream. Roasted pineapple slices can also be relished with an array of roasted meats or poultry. You could even simply toss them into your roasting dish with the veggies you’ll be serving as side dishes. Here’s a simple way to put it together.

The Roasted Pineapple Recipe


  • 3 star anise
  • A dollop of butter
  • 1 lemon
  • 3 tbsp honey
  • A pineapple
  • 7 peppercorns
  • 4 cardamom pods
  • 1-2 cinnamon sticks


  1. Use a hefty object to smash the cardamom pods into powder.
  2. Combine these with your peppercorns, star anise, and the cinnamon to a shallow dish.
  3. Slowly melt the butter over gentle heat.
  4. Pour in the lemon zest, honey, and lemon juice.
  5. Preheat your oven at approximately 400 degrees Fahrenheit before beginning.
  6. There are several ways to peel a pineapple. You could cut it into tiny chunks or remove its hard core.
  7. Spiced butter goes on top of the fruit in a compact baking dish.
  8. For a more uniformly cooked pineapple, bake it for about 20 minutes at 400 degrees Fahrenheit, turning it over once or twice.
  9. In the final five minutes of roasting, sprinkle the pineapple with a light dusting of confectioners’ sugar to caramelize the sugar and give it a more vibrant hue.
  10. Slice the pineapple into quarters and remove the core.
  11. Add a few scoops of ice cream, and serve. As mentioned, you can serve this with veggies and meat, too.
