A warming and nutritious recipe for dipping temperatures

This recipe for spinach soup is unlike any other. It’s creamy, packed with flavor, and can be tweaked for spices or herbs of your choice.

Ingredients

1 whole green onion, chopped

2 cloves garlic, minced

1 pound of trimmed spinach

1 russet potato, cut into small chunks

3 tbsp olive oil

Salt to taste

Ground black pepper to taste

4 cups vegetable broth

Cream to taste

Steps To Cook Spinach Soup

First, pour oil into a pot on medium heat. Add onions and allow them to simmer until they are soft and juicy. This will take around five minutes or less.

Add garlic, potato, and spinach to the pot, gently stirring the mixture. Once the aromas are released, add vegetable broth into the pot, stirring regularly.

Continue stirring till the spinach turns vibrant and the potatoes feel soft and tender (use a fork for this). At this stage, add a dash of salt and pepper.

Finally, add cream to the soup and switch off the heat.

Cooking Tips For Spinach Soup

For additional creaminess, blend your soup until the consistency gets thick and hefty.

Allow your soup to sit for ten or fifteen minutes before serving.

Use medium-intensity heat throughout the cook to avoid burning the ingredients and preserve their nutritional content.
