Ingredients
Sweet Enriched Dough
- Bread flour: 450 g (3 ½ cups)
- Whole milk, warmed to 38–40°C (100–105°F): 180 g (¾ cup)
- Instant yeast: 7 g (2 ¼ tsp)
- Granulated sugar: 75 g (⅓ cup)
- Unsalted butter, softened: 85 g (6 tbsp)
- Eggs, room temperature: 2 large
- Fine salt: 6 g (1 tsp)
Spice & Fruit Blend
- Crushed star anise: ½ tsp
- Ground cardamom: 1 tsp
- Dried pear, finely diced: 60 g (½ cup)
- Golden raisins: 60 g (½ cup)
- Almond slivers: 40 g (⅓ cup)
Finishing Sugar
- Granulated sugar for dusting: 2 tbsp
Rosewater Sugar Glaze
- Powdered sugar: 90 g (¾ cup)
- Rosewater: 1–2 tsp (to taste)
- Warm water: 1–2 tsp, as needed for thinning
Method
1. Prepare the Dough
- In a mixing bowl, whisk together warm milk, yeast, and 1 tbsp of the sugar. Let sit for 5 minutes until slightly foamy.
- Add remaining sugar, eggs, salt, spices (star anise and cardamom), and flour.
- Mix until a shaggy dough forms, then knead (by hand 10–12 min or stand mixer 7–8 min).
- Add softened butter gradually, kneading until fully incorporated and the dough becomes smooth, elastic, and slightly glossy.
- Knead in the dried pear, raisins, and almond slivers until evenly distributed.
- Place dough in an oiled bowl, cover, and let rise 1.5–2 hours, or until doubled.
2. Shape Into the Starlight Pattern
- Punch down dough and divide into three equal portions.
- Roll each into a 40–45 cm (16–18 in) rope.
- Braid the ropes together.
- Coil the braid into a circular shape, then pinch and pull outward at intervals to form five or six star “points.”
- Transfer to parchment-lined baking sheet; rise 35–45 minutes.
3. Sugar Dusting and Baking
- Brush loaf lightly with water or egg wash.
- Dust with 2 tbsp granulated sugar.
- Bake at 175°C (350°F) for 28–35 minutes, until golden and fragrant.
4. Rosewater Glaze
- Whisk powdered sugar, rosewater, and a few drops of water until thin and glossy.
- Brush the warm loaf lightly to create a shimmering, translucent crust.
