Tandoori Paneer Quinoa Bowl
Ingredients:
• 1 package of paneer
• 1 cup quinoa
• 1 cup plain yogurt
• 2 tablespoons tandoori spice blend
• 1 lemon, juiced
• 2 cloves garlic, minced
• 1 teaspoon ginger, grated
• Salt and pepper to taste
• 1 tablespoon olive oil
• 1 cucumber, diced
• 1 tomato, diced
• 1/4 red onion, thinly sliced
Instructions:
1. Mix yogurt, tandoori spice blend, lemon juice, minced garlic, grated ginger, salt, and pepper in a bowl. Add diced to the marinade, coating them evenly. Cover and refrigerate for at least 30 minutes.
2. Preheat the grill or grill pan over medium-high heat. Remove the paneer from the marinade and grill it for 2-3 minutes per side or until cooked through and charred. Remove from heat and let it rest for a few minutes before slicing into strips.
3. While the paneer is cooking, rinse quinoa under cold water. In a saucepan, bring 2 cups of water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15-20 minutes, until quinoa is cooked and water is absorbed. Fluff quinoa with a fork and set aside.
