If you’re looking for an authentic Levantine Arab meat dish that can be served for up to 24 hours on a vertical skewer (the most frequent kind of skewer in eateries).  Cuttings are made from the block of meat, which is then served with the rest of the meat still on the revolving spit. It may be eaten as a snack or wrapped in a pita or pita bread. It’s common for shawarma to be served with taboon bread, fattoush, tabbouleh, cucumbers, tomatoes, and other vegetables. Tzatziki is served with hummus, tahini, pickled turnip, and amba. Turkish döner skewers and Greek gyros are two of the region’s most popular foods.

“Shabab” is an Arabic word for “turning,” a reference to the way the meat is roasted on a rotisserie, “turning” around an axis. Similar nomenclature may be seen in the Turkish döner and Greek gyro, which both relate to the rotating movement of the cooking mechanism they are connected with.

On a vertical spit, seasoned meat and fat are alternately stacked to form shawarma. Decorations such as sliced onions, tomato or lemon halves are occasionally added to the top. Over the course of many hours, the meat is gently roasted on a spit rotating in front of or directly over an open flame. When it was first built, a cage held charcoal or wood that was burned to provide heat. The number of meat options available varies widely from establishment to establishment.

In order to extract the meat that is shaved off of a stack, huge knives, electric knives, or a tiny circular saw are used. Shawarma is a fast food item that may be prepared into a sandwich using pita or lavash with a variety of veggies and sauces. A wide range of side dishes are available to go with the shawarma. These include pickled turnips and pickled gherkins and pickles, as well as rhubarb, cabbage, and French fries.

Tahini, amba sauce, tahini, and hummus are just a few of the many dressings available. Garlicky mayo, toumaia , or pomegranate extract are all common accompaniments with chicken shawarma.

How to Make Shawarma at Home

  • Cooking the chicken on the grill or under the broiler is a great option!
  • It’s important to marinade your chicken. Toss all of the ingredients in a big dish with the chicken and mix well. Toss the chicken well to coat it. Toss in the onion pieces after you’ve added everything else. You may leave it overnight in the fridge, cover the bowl with plastic wrap, and let it marinade.
  • Prior to cooking, let the chicken sit at room temperature for an hour after marinating if you choose to do so.
  • To make the sauce – Meld all the sauce ingredients and whisk until smooth. If necessary, season with salt. Put this sauce in the refrigerator in an airtight container for approximately 5 days.
  • For the broiler  – The broiler should be set to high and the oven rack should be placed directly under it.
  • Place a metal baking pan on a rack.
  • On a rack, lay out the chicken and broil it for about 18 minutes until the flesh reaches 165 degrees Fahrenheit.
  • For the Barbecue – After preheating the grill, place the marinated poultry  on it. For around 20 minutes, cook over medium-high heat. The chicken should be flipped over after 10 minutes in the oven. When the chicken reaches an internal temperature of 165 degrees Fahrenheit, it is done cooking. Toss the chicken in a bowl and set the rest aside.
  • Arrange the chicken in strip-like slices.
