All things Whiskey and Chai with Rachna Hukmani

During the second SEEMA virtual happy hour, Rachna Hukmani, of Whiskey Stories, shared her entrepreneurial story, as well as her version of Sweet Chai O’Mine, a whiskey and chai cocktail. The adult beverage used favorite ingredients of our founder, Seema Kumar, and you can check out the recipe to make it on your own. The featured cocktail used some of our founder, Seema Kumar’s favorite ingredients. Here’s the recipe so you can create it in the comfort of your own home: the SEEMA version of Whiskey Stories’ Sweet Chai O’Mine.


  • 2 teaspoons rose water. can skip this if you don’t have it. 
  • 7-8 cardamom pods
  • 1 teaspoon grated ginger or a sprinkle or two of ground ginger powder to taste. Ground ginger powder tends to be very strong to use sparingly. 
  • 4 cloves or 2 cinammon sticks. 
  • orange peel
  • honey
  • 1 tablespoon loose black tea
  • 2 oz Buffalo Trace Bourbon or Old Overholt Rye whisky (which is what Rachna used during the live Happy Hour). For a Scotch she recommend using Spice Tree Compass Box Blended Scotch for this recipe. 

Ghee Method (Optional) 

Heat cardamon, tea, ginger and cloves/cinammon in a saucepan with two cups of water. Bring to a boil. Add honey while still hot. Once blended with honey, let it cool. Strain and add to glass. Add rosewater. Add this mix and the bourbon into a cocktail shaker with ice. Shake and serve in a cocktail glass. Add orange peel as garnish. This is an Indian twist on the classic American southern tradition of sweet tea and bourbon. If not using ice method, try Rachna’s ghee in a jar method with cocktail shaking. For this, add a 1/2 teaspoon of ghee to chai when it is boiling. Then keep a little melted ghee aside and when mixing chai and whiskey in a jar add a little ghee, screw on lid and shake vigorously. You will see cocktail change color too with the ghee. Serve with orange peel twist, orange chips or kiwi candy. Pair with citrus based desserts, dark chocolate. Can also be paired with a great grilled fish recipe for dinner or smoked eggplant dinner. If using a smokier whiskey consider add a little black pepper in tea to cut the smoky flavor slightly.

Thinking of adding ghee or clarified butter? Why not!

Rachna mentioned that adding ghee to chai and also to some of whiskey cocktails adds a distinguished aroma, especially as ghee or clarified butter is heat causing. Try it shaken/non iced cocktails because it really works with the natural oils and fats in whiskey/whisky to help decipher notes.

Some good team recommendations are: Ahmed Darjeeling Tea and Harvey Tea & Sons Ginger Licorice Tea and Harvey Tea & Sons Pumpkin Spice tea to make your cocktail three ways: Stirred (ginger tea), Shaken (Darjeeling tea) and Jarred (pumpkin spice tea and ghee)! She calls her glass jar cocktail method “Jarred” because it’s a jar and also the vigorous shaking can bring out bolder notes 😉
