The Versatility of Carrots

Bake, roast, ferment, or pickle—here’s how to experiment with this vegetable in spring

Carrots are a storehouse of goodness and are known for being beneficial for the eyes specifically. Here are some ways to use the vegetable from Reetu Uday Kugaji, culinary expert and chef consultant.

Carrot Pickle

Prepared by incorporating carrots, kalonji, mustard seeds, fenugreek, turmeric, salt, asafetida, red chili powder, and mustard oil, this is a delicious way to make the most of the vegetable. Make sure that the pickle is moisture free.

Probiotic Drinks

You can make kanji with either red carrots or black carrots or with a combination of both. A delectable traditional north Indian probiotic drink, kanji is packed with nutrition and has a tangy and pungent in flavor. The drink is prepared by fermenting batons of black carrots in water mixed with salt, black salt, black pepper powder, asafetida and coarsely ground black mustard seeds.

Carrot Soup

Prepare soup by incorporating carrots, onions, butter, and pepper powder. Pair it with garlic crackers or garlic soup sticks for a perfect appetizer.

Carrot Poriyal

The Tamil Nadu-style carrot poriyal is a stir-fried preparation. Finely chopped carrots are tempered with peanut oil, mustard seeds, cumin seeds, dried red chilies, curry leaves, chopped onion, salt, and a pinch of asafetida. You can optionally add shredded fresh coconut.

Carrot Raita

Add grated carrots to churned or whisked curds, along with salt, cumin powder, pepper powder, and chopped coriander leaves. Serve cold as an accompaniment to rice.

Carrot Chutney

Carrot chutney is a Maharashtrian dish made with red or orange grated carrots, freshly grated coconut, coarsely ground roasted peanut powder, chopped coriander leaves, lemon juice, salt to taste and tempered in hot oil with mustard seeds and asafetida.

Carrot Kheer

This is a delicious and creamy kheer prepared using fresh red and juicy carrots, milk, sugar, and mixed nuts. Serve it chilled or warm.

Carrot Cake

Bake a carrot cake with a great balance of spices and fresh carrots. Prepare the cake batter with all-purpose flour, baking powder, baking soda, ground cinnamon, salt, grated carrots, chopped nuts and raisins, shredded coconut, sugar, eggs, and canola oil, then bake in the oven. A frosting of cream cheese, unsalted butter, confectioner’s sugar, and lemon juice completes this cake. You can also make carrot cupcakes using this recipe.

Carrot Bread

This is a simple and quick bread that is spiced with cinnamon, nutmeg, and ginger. It has the right amount of sweetness for a breakfast or afternoon snack. Make a dough with carrots, all-purpose flour, eggs, baking powder, baking soda, milk, oil, vanilla extract, cinnamon, nutmeg, ginger, and walnuts. Then bake in the oven till done.

Carrot Ice Cream

This can be made with fresh carrots that are cooked, pureed, and cooled completely. Add heavy cream, condensed milk, honey, cinnamon, nutmeg powder, churn it in an ice cream maker, and freeze!

Oven-Roasted Carrots or Baked Carrots

Made with fresh peeled carrots, make sure that the head and tail are discarded, and they are tossed with salt, pepper, olive oil, and roasted until done.
