How to Make Dahi Bhindi

What You’ll Need

The following recipe is inspired by Hebbars Kitchen .

Onion Paste Ingredients    

  •  ½ onion         
  •   1 inch ginger         
  •  2 cloves garlic         
  • 1-2 tsp oil         
  • 2 tbsp water    

Ingredients to fry the bhindi or okra 

  • 10 bhindi         
  • 2 tsp oil    

Ingredients for bhindi gravy

  • 1 tsp oil         
  •  ¾ tsp mustard seeds         
  •  ¼ tsp methi seeds         
  •   ¾ tsp jeera / cumin seeds         
  • A pinch of hing   
  •     Some curry leaves         
  •     1 – 2 tsp kashmiri chilli powder         
  •     ½ tsp turmeric powder         
  •     1 cup thick yogurt (you should blend this into a uniform consistency)         
  •     ½ tsp coriander powder         
  •  ¼ cup water         
  • A few coriander leaves (diced)         
  •  ¼ tsp garam masala    

Technique Used to Make Dahi Bhindi 

  • To make onion paste, heat 2 tsp of oil in a kadai and cook the onions, ginger, and garlic.
  • Cook in oil until they get a pale golden hue. Wait until it has cooled down completely.
  • Pour in the necessary amount of water and mix until a homogeneous paste forms.
  •  Set aside

How to Prepare Bhindi (Okra) for Frying

  • Sliced bhindis may be fried in the same kadai with a tsp of oil.
  • Stir-fry until bhindi is cooked through and a deep green color throughout.
  • Put aside and put out of the way.

Sauce for For Bhindi 

  • Stir in a teaspoon of oil, alongside mustard seeds, jeera, methi, and asoefitoda, to the same kadai.
  • You may add the curry leaves after they start to sputter.
  • Add the onion puree you just made and cook it for a minute.
  • Spice it up with some cumin, paprika, or paprika powder, and salt. simmer the masala in oil till it is cooked.
  • We recommend that you add some water.
  • Whisk in 1 cup of yogurt or curds and cook over low heat for a few minutes.
  • Rapidly stir in the fried bhindi/okra.
  • Turning off the stove burner is an absolute must. 
  • Put the cover on it, and let it simmer for five minutes.
  • Top with a pinch of chopped coriander leaves.
  • Season with garam masala and combine well for a satisfying result.
