Step one: Making the Koobideh
Ingredients
- Ground beef
- Grated and drained onions
- Pepper
- Tomatoes
- Whole onions
- Salt
- Turmeric powder
- Sumac powder
- Saffron threads
- Boiling water
Method
- In half cup of boiling water, dilute a few saffron threads, then infuse for ten minutes.
- Mix the ground meat with grated onion, pepper, salt, turmeric and sumac powder. Remember to add one tablespoon of turmeric and the same amount for sumac. As you add each ingredient, stir for about 2 minutes.
- Add the infused saffron water to the mixed ingredients and mix well.
- Transfer the mixture into a covered container, then place it in the fridge for a minimum of 12 hours.
- After atleast 12 hours, make Koobideh kebabs by pressing the meat onto barbecue skewers. Remember to pinch the meat regularly throughout the skewer after every inch to get its characteristic shape.
- Grill the skewers by placing them over the coals of a BBQ. Turn them frequently for an even grilling for about 15 minutes.
- Place 4 tomatoes and two onions on the BBQ and turn often. The tomatoes and onions are a garnish to the skewers.
Step Two: Making the Chelo
Ingredients
- Basmati rice
- Sunflower Oil or olive oil
- Salt
- Saffron threads
- Water
- Melted and unsalted butter
Method
- Place 2 cups of basmati rice in a fine sieve, then rinse it with warm water for about 2 minutes.
- Drain the rice, add 6 cups of water and 2 teaspoons of salt and bring to boil in a large, heavy nonstick skillet using high heat.
- After the water has boiled up, add the rice, then boil uncovered for approximately 7 munites while stirring it often.
- If there is water remaining after boiling the rice, drain it by sieving it into a bowl, then rinse the rice with warm running water.
- Mix 2 tablespoons of melted and unsalted butter, one tablespoon of sunflower or olive oil and 2 tablespoons of reserved rice cooking liquid. Then saffron in a nonstick skillet and place over high heat.
- Add a third of the cooked rice, stirring to coat, then spread evenly over the bottom of the pan.
- Add the remaining cooked rice as you spread evenly, and drizzle it with the remaining melted butter.
- Place a clean dish towel over the rice, then cover the pan with a fitting lid.
- Cook over high heat for about 4 minutes or until the rice turns brown at the bottom of the pan. Then, reduce the heat to low and cook until you achieve a crispy and tender cooked rice for about 20 minutes.
- Remove the lid, then invert the ready rice onto a plate or tray, depending on the quantity of rice.
- Serve the rice onto plates, then remove the tomatoes from the skewers. Place a skewer and the tomatoes and onions on each plate. You can sprinkle green onions, cilantro and mint over each serving and serve your Chelo kebab with lemon wedges.
